Menu didn’t work.
Earlier at the start of this blog, we decided that we’d try to make a menu for the week. While doing this is a very good idea, it just didn’t work very well for us. My son lives with us in the summer and there are too many activities going on in our household to try and implement the cooking at home. After he went back to school, I took a second job with a transcription company in Maryland, started working for my husband’s new company, P&J Liberty Enterprises, Inc., and am trying to maintain my own blogs. Making a menu and sticking to it was just not working.
New plan for grocery shopping and menu making.
So this week we decided that we’d try and cook several different dishes to use as leftovers throughout the week. I’ve been reading about it and thought we’d give it a try. Doing this method of planning will make it easier to follow a menu.

Yesterday, I cooked a huge pot of chili. So last night we had chili. Tomorrow night we will have cinco nachos. I also made a big pot of red beans. So Tuesday night we will have either have red beans and rice or I’ll fry some salmon and have something like that. Today, I made a big pot of beef stew and cornbread. I’ll warm it up when I come home for lunch, or if it looks like I’m going to have to work through lunch, then I’ll take some with me to warm up at work. Depending on how the chili holds out, we will probably have chili dogs or chili burgers one day this week as well.
We’re already planning next week’s grocery shopping.
We are already planning next weekend’s cooking. We are going to buy a huge market trimmed brisket. There are a number of dishes that can be prepared from it.

This is a really great idea. I have a hard time sticking to a menu, as well, os this is definitely something worth trying.
Thanks a lot!
