Going out to eat has come to a screeching halt around here. We won’t be going out very much until my hubby goes back to work at his seasonal job in early May. So now we are always trying to come up with quick and easy ideas for lunch or for a side dish with dinner.
One thing that we use a lot of that most people probably had their fill of in college is Raman Noodles. A quick and easy recipe that I’ve come up with that I taught my hubby how to make for lunch is a Stir Fry.

This is what we do. For one person’s lunch, take a pack of the noodles and put them in a microwave bowl with enough water to come to the top of the noodles. Microwave for 5 minutes. Be careful when taking it out of the microwave — IT WILL BE HOT!!!! We don’t use the seasoning pack that comes with the noodles.
Then we put a little bit of oil in a pan and while the noodles are draining, we add some frozen stir fry veggies to the oil. When the veggies are cooked, add the noodles to the pan. Season it with a little bit of soy sauce or your favorite oriental stir fry seasoning and there you have it — a tasty frugal stir fry lunch or a great frugal side dish for dinner.
