
For a while now, my hubby has been saying that he is tired of the same ole, same ole for supper. He’s pretty picky. He doesn’t like casseroles, lasagna, or Hamburger Helper. He’s a beef and potatoes kind of guy. He does like chicken but usually fried. So I started looking for recipes that I could adapt to “our” style of eating . Yes, he says we have a “style” of eating. I told him he was beginning to sound like a “food snob”. His response was I’ve been this way for “x” amount of years and I’m too old to change.
In my search I found several recipes that I thought could be changed to “our” style of eating. Last night’s dish was too much like a casserole. It went over ok but not enough to rate the “this is a keeper” statement. So I went a totally different direction tonight. I found a “Chicken Soup Crock Pot Recipe” that I could adapt. So I started talking to him about the recipe and listened to his suggestions about what he’d like to change and add. He doesn’t like a lot of seasonings like thyme and rosemary. We took those out and added the Supreme Seasoning. This is what we came up with.
The Frugal Housewife’s Chicken Soup
1 1/2 fresh Chicken Tenderloins (cubed and cooked)
1 box of Chicken Broth
1/2 onion (chopped)
1/2 bag of baby carrots (cut in chunks)
4 medium potatoes (cubed)
1 can of Mushroom Soup with Roasted Garlic
1/2 bag of frozen green peas (small bag)
1 stalk of celery (chopped)
Salt and pepper to taste
Seasoning Supreme (Like Mrs. Dash)
I cooked this in the crock pot. My crock pot cooks faster than most I’ve tried. I came in at 12:15, on my lunch hour, and cut everything and got it in the crock pot (except for the green peas) and turned it on high. When I came home at 3:30, it was technically done, but I let it cook for another 1 1/2 hour. Before serving I put in the 1/2 bag of frozen peas. In about 15 minutes, it was ready.
We figured the cost for this meal. It came to just under $9 and made between 6 and 8 servings. The number of servings would depend on how much you put in each bowl. (I know — some are saying “well duh!” but I felt I had to put that in for those who might say it didn’t make as much as I said it would.)
This one was a “keeper”. He’s even figuring ways I can change it to include beef and make different soups. This one is definitely going on The Frugal Housewife Favorite Recipe page!

Ooh! I miss having chicken soup. We haven’t had that for a while, it’s usually my Dad who would ask for chicken soup. Unfortunately, I don’t know how to prepare one.
Wow, that is a lot for under $9. My husband has been feeling the same way lately. He is sick of the same old stuff too. I have never made chicken soup from scratch. This just may surprise him!
now i feel i should learn cooking……especially when i’m living all by my own….and eating junky crap isn’t good everyday…..

I think I could use this recipe especially now that I’m sick. I need soup so badly.
This soup was such an easy soup/stew to make. I also think that it is also going to be one that I can make in batches and freeze. It’s also a soup/stew that you can change easily. Instead of chicken, one time I’m going to try using beef and beef broth.
What time’s dinner? I’ll bring a bottle of wine and desert. lol
You know I never think about using my crock pot until the weather changes and it gets cold. I cook so differently in the summer and winter. Winter foods tend to me heavier, more substantial I guess.

i love to eat Chicken Soup, my mom used always serve that dish with me specially when i am sick during my childhood days.
Chicken soup is one of my favorite dishes when i was a kid and until now. It is tasty and very yummy.
