Chiles, Chiles, Chiles




It is soooooooooo cold here in South Texas. We did have a high of 50 degrees here today and we are thawing out but the temperature is supposed to dip back down into the teens again tonight.  So today I was thinking about the post for the green chile dishes and thought it’s going to be a GREAT time to make a dish and take the actual picture of it.  So for tonight’s dinner I made my Texas Goulash and added Green Chiles.  I wanted to make Mexican Cornbread to go with it but my hubby couldn’t handle all the chile action.  I’ll post the picture and then add the recipe to the Recipe Page later.    Here’s my Texas Goulash that I made tonight. The picture had to be taken quickly because my hubby was rushing me.  It’s not the prettiest dish but it was so good after all the cold weather we’ve been having.

Another dish that I’ve made using the green chiles is my Texas Enchilada Casserole. Both are easy to make and you can adjust the amount of chiles that you use.  In both recipes the canned chiles were not overpowering or hot.  I’ll also be posting the Enchilada Casserole recipe later.  We also put the canned chiles in stews and soups.

    It’s good to hear that the weather is holding up there. Unfortunately, there are several parts in the US which are still practically buried under tons of snow.

    It all looks yummy! Yeah, it’s been so cold here, around 0, I can’t stand it. We eat a lot of spicy foods too, but I use Indian herbs (I LOVE Indian food) warms you up for a bit anyway.
