A cold front blew threw our West Texas town the other day and temperatures are a bit cooler today than they were at the beginning of the week. When the temperature starts changing outside it makes me start thinking about soups and stews again! One soup recipe that can be made in the crock pot is Potato Soup.

Here’s my potato soup recipe.
4 – 6 medium large potatoes (peeled and cubed)
1/2 onion (diced)
1 can cream of mushroom soup w/roasted garlic
1 can cream of celery soup
1 carrot (diced)
4 cups of water
2 cups of chicken broth
Put all ingredients in crock pot and cook on low for 8-10 hours or high for 3-4 hours.
This soup is great if topped with crumbled bacon, chives, or shredded cheddar cheese. You could even put a dollop of sour cream on it for that baked potato soup taste.
You may have noticed that I left off cream, milk, or even evaporated milk. My husband doesn’t like any of those in his soup which is why I use the cream of mushroom and cream of celery soup. If you like your soup a little thicker, cut back on the amount of water that you put in or add cream or evaporated milk.
